With the weather hinting and teasing at the coming of Spring I can't help but dream of our veggie garden this year. We're planning a big garden with lots of homegrown veggies and a lush herb garden. I can't wait. Seriously can't wait. Bring it on!

Are you planning a veggie garden this year? What do you usually grow? I'm feeling stumped, like I left something out.

Because every parent battles with their children who are constantly wanting to eat veggies. Right?
I mean, that's a problem, right?

I should also mention that she just ate a full breakfast. I mean, I do feed her occasionally.

Best Ever Pasta Salad

This pasta salad is the best ever. I'm mildly obsessed with it. I've made it several times in the past weeks BECAUSE IT'S SO EASY. And mind numbingly tasty. I was passed down to me by my friend Rachel and I CAN'T STOP EATING IT!

The beauty of this pasta salad is that you can put in it whatever you like! It's less of a recipe and more of an inspirational guideline ;)

The veggies are the real star in the dish. Don't be afraid to go overboard. And get bold, cut em nice and chunky. You'll want to TASTE them. I used fresh veggies from the garden, so I just used whatever I had on hand!

Best Ever Pasta Salad:
boiled and cooled pasta
fresh tomato
green beans
green onion
cucumber
tuna (optional)

Salad dressing:
2Tbsp of good quality mayonnaise
1/2 tsp chopped up garlic
1/2 tsp mustard
1tbsp vinegar

-Chop your veggies nice and chunky and add to the drained pasta. Add tuna (optional) and salad dressing and mix thoroughly. Chill and serve!

Variations:
Try adding some feta cheese! Or forego the tuna and add some chopped salami! YUM!

I am intensely proud of this garden. I love this garden. Sometimes I'll go stand on our deck just to take a quick peek at it and survey its beauty. I weed it daily and carefully water each plant.

I love that we're able to grow and enjoy our own food! It's 100% organic and pesticide free, which sounds way cooler and more intentional than we meant it to be. I just haven't sprayed it with anything. I don't plan to either out of laziness. And because I can wash bugs off. That said, there aren't tons of bugs. So maybe that's why I haven't done anything about it.

I love checking its progress everyday. I'm always finding something new! The beans have finally reached and climbed through the gutter, brand new baby banana peppers, tiny little green tomatoes (that are taking way too long to ripen for my liking), insane amounts of lettuce no matter how much we pick (anyone want any lettuce?), beautiful new cucumbers growing faster and faster.

I love this garden. It's so peaceful. And so alive.
